Paramita Sound starts hosting previews this weekend

More than a year after closing up shop in West Village, record store Paramita Sound preparing to reopening in downtown Detroit with a wine bar. Partners Andrey Douthard, Anna Atanassova, and Zach Poley confirm to the Detroit Free Press that the new location will host previews at the base of the Siren Hotel on this weekend, with an official opening on Friday, September 6.

Paramita Sound got its start in 2014 in West Village selling records and holding monthly music events, but noise complaints and low sales forced the shop to move on in 2018. The group is adding a beverage component to the record store to make the business more financially sustainable. At the new 650-square-foot space inside the Siren, Paramita will feature room for DJs, records, and a 15-seat bar serving 30 diverse wines and a handful of beers. Atanassova, whose headed bar programs at Flowers of Vietnam and Rock City Eatery, is taking the lead with the menu.

Eat spaghetti and meatballs for breakfast and dinner at chef Kate Williams’ new all-day restaurant

Detroit is a city that’s blessed with numerous examples of well-preserved turn-of-the-century architecture and resilient dining establishments that have retained their classic character. A few iconic restaurants have even found new life in Detroit after careful reconstruction that returned them to their original splendor. Karl’s fits none of these categories, but it’ll easily fool you. The new all-day restaurant and bar set to open on Thursday, August 29 at the Siren Hotel, somehow feels like it’s always been part of the Wurlitzer Building — a time capsule just waiting to be discovered.

The latest downtown project from chef Kate Williams, partner Matt Wang, and hotel developers ASH NYC is a convincing reimagining of an old-fashioned luncheonette counter. Visitors to the Siren can finally take the lobby’s grand staircase up the to second floor and find a roughly 80-seat diner serving freshly baked cinnamon rolls, french omelettes, and spaghetti and meatballs. Occasionally, the People Mover will rumble by on its track next to the window.

It’s easy to forget that just a few years ago the Wurlitzer Building was literally crumbling onto surrounding roofs. The iconic building, which once housed the instrument maker Wurlitzer Company, has undergone four years of renovations adding several floors of hotel rooms, multiple bars, a cafe, a flower shop, and a barbershop to the property. Karl’s is one of the final pieces of the project. It occupies a room that was previously completely stripped back to the studs. Only the wood floors, now painted with a checker pattern are original to the space.

The opening marks Williams third food and beverage project in two years. The chef debuted Lady of the House in Corktown in September 2017 and followed it up with Candy Bar at the Siren in March 2018. The Karl’s name is a reference to A. Karl’s Kercheval Home Bakery, a shop that Williams’ great great grandfather Anton Karl once owned and operated on Detroit’s east side. Located in a now non-existent building near Marrow in West Village, the business closed sometime after the Great Depression. Karl’s is Williams’ interpretation of what that family business might have been like if it had survived to 2019. “We wanted this to be as if Karl’s never closed and it just evolved over generations,” Williams says.

Williams foremost wanted to open a bakery and then became inspired by the family history of baking in developing the menu and feel for the restaurant. She interviewed her mother and her aunts to try to get a sense of what they grew up eating. Like many Detroiters, Williams’ mother fondly recalled going to the old Hudson’s Department Store with Williams’ grandmother and ordering the Maurice salad. She ordered it so often that the restaurant eventually gave her the recipe. Other items like grilled cheese sandwiches reflect Williams’ own memories of what her grandmother used to prepare for her grandchildren when they visited the cottage.

Williams’ says the space reflects a era of upscale department stores and train car dining — an atmosphere where she could picture her grandmother getting dressed up to go out. “There’s a club sandwich, there’s a ham sandwich, but it felt like, for her, that would be something glamorous,” she says.

ASH NYC took the lead on the design for the space, which seamlessly incorporates the charms of 1940s lunch counters with diner aesthetics and 1970s-era dive bars. ASH’s chief creative officer Will Cooper tells Eater that the group worked off archival photos and also looked to existing spaces for inspiration such as Lexington Candy Shop in New York and Lamy’s Diner at the Henry Ford Museum. The walls are a combination of cream colored laminate and chrome, a callback to old-school diner floors. Dark brown pegboard lining the top of the walls helps give the restaurant its lived-in look. The board is decorated with Williams’ family photos as well as vintage momentos including old newspapers and Detroit sports memorabilia.

Williams worked with design firm Lafayette American to create a paper placemat for Karl’s, inspired by the ones used at the Guernsey cafe in Northville where she worked her first job. Each table is outfitted with Karl’s golf pencils, so customers can fill out the crossword puzzles and connect the dots.

Karl’s partners tapped chef Brennan Calnin, opening chef at Townhouse, and pastry chef Jessica Chaney, a Grey Ghost alum, to take the lead in the kitchen at Karl’s. Lunch and dinner will be served all day with breakfast running from 10 a.m. to 2 p.m. Diners can find items like a wedge salad dressed up with deviled eggs, crumbled bacon, creamy blue cheese dressing, and everything bagel spice alongside plates of spaghetti and meatballs made with an all-poultry blend of duck and chicken. “The best chicken salad around,” is made using Lady of the House’s recipe roasted chicken, while the ham sandwich features the restaurant’s Parisian ham. The German breakfast rolls come stuffed with farmer’s cheese and topped with butter and poppyseeds.

From the bar, look out for classic cocktails like daiquiris, Old Fashioneds, Manhattans, and martinis made with gin from Lady of the House’s collaboration with Detroit City Distillery. There’s also sections devoted to boilermakers, boozy milkshakes made with Guernsey ice cream, wine, and beer.

In the evenings, Karl’s will host live music from local artists and DJs starting out with DJ Andrey Douthard of Paramita Sound, a former West Village record store and wine bar reopening in the Siren Hotel this fall. Customers can also feed quarters into the restored 1957 Wurlitzer jukebox that ASH NYC found at Bob’s Jukebox Emporium on Detroit’s east side. The console is outfitted with an older set of 45s as well as some provided by Third Man Records, Paramita Sound, and elsewhere. “The music is something that was really important to me because not just because it’s the Wurlitzer Building, but because it’s so Detroit,” Williams says.

The stunning Siren Hotel cocktail lounge is improving with age

There’s something classic about Candy Bar, the stunning, pink cocktail lounge at the base of Detroit’s Siren Hotel. The bar’s Eater Award-winning design certainly hit at the peak of a color design trend in 2018, but it’s the details — the gorgeous curved marble bar top, massive curled glass chandelier, and flaring white palms — that make the space stand out from its contemporaries while feeling timeless. The cocktails, too, have aged well, with beverages like the Bubble Rum remaining a hit since they first debuted more than a year ago. Still, like all good bars, even classics sometimes deserve a little freshening up.

The team at Candy Bar plans to roll out its first changes to its menu since the opening this summer. “I think a good cocktail menu doesn’t need to change seasonally,” says chef Kate Williams, owner of Lady of the House and Candy Bar. “We’ve had really awesome staples on the menu for a long time and now we’re ready to kind of stretch a little bit and see what else we can do,” she says.

Part of the delayed timing for the menu change comes with the popularity of Candy Bar. Williams says it’s been at times hard to keep up with the interest in Candy Bar, which proved far more popular than she and her partners Matt Wang and Siren Hotel developer ASH NYC had projected for the tiny, 28-seat hotel lounge. “There’s really nothing quite like this,” she says of the cocktail bar.

The timing of the menu turnover also comes ahead of the anticipated opening of Williams’ other project at the hotel — a diner called Karl’s on the second floor. Once the restaurant opens, staff at Candy Bar will be able to utilize some of the equipment and space at Karl’s to help streamline prep and dishwashing for the cocktail bar.

Williams says that the hotel bar has given those bartenders an additional avenue to show off their talents beyond the less cocktail-focused bar at Lady of the House. Three of those bartenders — Andrew John, Jonathan Shock, and Jesse Cottongim — joined Eater on a recent afternoon to preview Candy Bar’s next act in cocktails. The drinks, like the bar, lean heavy into vintage vibes, nostalgia, and, of course, candy.

The Dark Arts

Bartender Jonathan Shock developed the Dark Arts, an espresso martini that riffs on the Irish coffee at Lady of the House. “I wanted to do a high octane version with espresso,” he says. The drink is made with reposado tequila, amaretto, and a coffee amaro collaboration between Long Road Distillers in Grand Rapids and Madcap Coffee. The whole thing is shaken with an ounce of espresso from fellow Siren Hotel resident Populace Coffee and finished with a float of cream on top.

Elvis’s Nightcap

Bartender Andrew John riffs on an Elvis Presley favorite — peanut butter and banana sandwiches — with the Elvis’s Nightcap. The drink uses dried peanut butter and fresh banana-infused white rum, which is put through a centrifuge to separate the liquids from solids. The booze is then poured over a big king ice cube.
Lady Diana

John is particularly proud of the Lady Diana, a drink that’s somewhat influenced by chef Kate Williams’ use of pistachios on the carrot steak at Lady of the House as well as famed Detroit-born cocktail, the Last Word. The Lady Diana, named after music legend Diana Ross, uses pistachio-infused Norden Aquavit that’s tossed into a Vitamix and clarified in a centrifuge. The drink is then shaken with Lady of the House’s gin (a collaboration with Detroit City Distillery), yellow Chartreuse, and bay leaf tea honey. John pours it over a ski slope of crushed ice and garnishes the cocktail with the candied bay leaf that’s leftover from making the tea honey.

Some Like It Sage

Another gin-based cocktail that calls back to classic film, the Some Like It Sage features dried sage-infused gin that’s washed with olive oil. The drink is then stirred with pineapple, Peychaud’s Bitters, and Aperol, which gives the beverage an orange hue.

Milk-Clarified Punch

One of John’s cocktails is a milk-clarified punch. The cocktail calls for a blend of three different rums with Remy Martin 1738 cognac and cointreau liqueur. The drink is then mixed with Orange Grove Vanilla tea, pink and black peppercorns, coriander, and lavender, which is clarified with whole milk. Everything is shaken with lemon and honey and garnished with orange peel.

Old Fashioned Variation

Bartender Jesse Cottongim decided to play with the recipe for an Old Fashioned in an old fashioned way using candy. “Werther’s, for me, was always the grandma candy,” he says of the caramel hard candies. The cocktail features bourbon, Werther’s caramel bitters, and Long Road Distillers nocino walnut liqueur, which is stirred together and garnished with a 1970s-esque orange peel and cherry skewered on a flamingo-topped toothpick. “I wanted to stick with sort of vintage vibes, like what we’ve got going on here [at Candy Bar],” Cottongim says.

Sing along to a live piano at the Siren Hotel’s new cocktail bar

Visitors to downtown Detroit will soon be able to belt out their own renditions of “Free Fallin’” accompanied by a live piano. Sid Gold’s Request Room, a piano karaoke bar, is preparing to open its second location inside the Siren Hotel in mid-July. Sid Gold’s is the brainchild of Beauty Bar founder Paul Devitt and former Psychedelic Furs keyboardist Joe McGinty. The pair opened their first piano bar in New York in 2015. Devitt and McGinty worked on finding a location for a second Sid Gold’s in Detroit for several years before eventually settling into the Wurlitzer Building.

Like tasting menu restaurant Albena, Sid Gold’s is located down the alley between the Siren Hotel and the Element Hotel. Customers can find the door below the karaoke bar’s brightly lit neon sign. An alcove next to the entrance will feature a calendar indicating the week’s scheduled entertainment as well as the bar menu. Stepping inside, visitors enter Sid Gold’s lounge area complete with a large, U-shaped bar with a mirrored back bar and dim lighting from a mixture of antique lamps and amber pendant lights. Devitt amps up the throwback ambience with retro barware and 1970s-era chairs and couches. The walls, meanwhile, shimmer with blue and gold paint.

The venue is divided into two distinct spaces with the piano area in the back. A curved table surrounds the instrument while high top tables line the walls. Both rooms feature recessed ceilings with clouds and swirling galaxy motifs painted by New York-based artist Steven Hammel.

The bar will offer a similar menu to the New York location with a mixture of classic cocktails such as French 75s the and music-inspired drinks like the Velvet Underground with bourbon, lime, and velvet falernum. Sid Gold’s will also offer beer and wine. The physical menu is designed to look like a record.

Sid Gold’s will feature a menu of songs as well ranging from goth rock staples like “Bella Lugosi’s Dead” to iconic Brit pop tunes like “Let It Be.” Patrons put in their requests and then take the mic as a trained musician plays along. The bar is also expected to host other entertainment including burlesque performances.

Sid Gold’s is aiming to open within the next two weeks followed by a grand opening the following weekend featuring McGinty at the piano and a special musical guest. Stay tuned for an official opening date soon. Photographer Michelle Gerard took a tour of the cool new bar ahead of the opening. Take a look around Sid Gold’s in the gallery below.

The popular New York-based bar is heading to the Siren Hotel

New York’s popular piano karaoke lounge Sid Gold’s Request Room is putting the final touches on its new location inside downtown Detroit’s Siren Hotel. While an exact date hasn’t been set yet, owner Paul Devitt tells Eater that the lively bar and entertainment venue is on track to open downtown within the first two weeks of June.

Devitt, who is also the founder of Beauty Bar, opened the original karaoke concept with partner and former Psychedelic Furs keyboardist Joe McGinty in 2015. The Detroit location occupies a 1,700-square-foot space on the hotel’s ground floor with access through the Wurlitzer Building’s alley. It’s expected to feature a separate bar room and piano area with seats for roughly 70 people. Customers at Sid Gold’s will be able to sing along to their favorite pop, punk, soul, and classic rock songs performed by a live musician. Like the New York bar, the location is also expected to regularly host burlesque performers.

Albena’s tasting menu will cost $130 per person

Albena, one of Detroit’s most anxiously awaited restaurants, has just opened its reservation books. The small, eight-seat tasting menu restaurant from chef Garrett Lipar is tucked away on the ground floor of the Siren Hotel and has been in the works for more than two years.

The books were opened for the first two months of service via online reservation platform Tock on Monday morning. The first reservations appear to be available on the weekend of August 24 through August 26 with seatings beginning at 4 p.m. Tickets can be purchased for one to four people at $130 per person. The tasting menu is simply described as: “A ninety minute progressive expression of dinner.” A representative from the Siren told Eater no additional details were available, but expect more updates soon.

The restaurant is named after his grandmother. Lipar told Eater at the time that the tasting menu would focus on between eight and 12 plates per meal with a brisk pace. “We’re looking to define Great Lakes cuisine and really push the boundaries here,” he said in an interview with Eater National’s Hillary Dixler Canavan last fall.

The popular New York lounge is opening inside the Siren Hotel in October

Pianos are returning to the Wurlitzer Building with the opening of Sid Gold’s Request Room later this fall. New York’s popular piano karaoke bar is expanding to the Siren Hotel’s tightly packed ground floor.

Sid Gold’s is known for its eclectic approach to karaoke where customers can request songs and belt out their favorite tunes — anything from pop to punk to soul to classic rock — accompanied by a live pianist. The bar also regularly showcases burlesque performances.

Paul Devitt, who owns a fleet of Beauty Bar cocktail lounges across the country, and Joe McGinty, a former keyboardist for the Psychedelic Furs, are the partners behind Sid Gold’s. The paired teamed up to open the original mid-century influenced piano bar in New York’s Chelsea neighborhood in 2015. The venue gets its name from one of the investor’s fathers. Detroit will be the bar’s second only location.

Bringing Sid Gold’s to Detroit has been a multi-year process for Devitt and McGinty. Devitt tells Eater he first became interested in bringing a bar to Detroit, after a longtime customer suggested he pay a visit to the city. During his trip, Devitt explored a space in Corktown, but was drawn to downtown — an area he hadn’t visited in nearly 40 years. “[I] came downtown and just was blown away what was happening there,” he says. “I love the architecture, the scale of it, the walkability, and everything being right there.”

Sid Gold’s partners had been in the process of negotiating a lease for a space near the John Varvatos storefront along Woodward Avenue, but decided to abandon the deal after connecting with the developers of the Siren Hotel. Eventually, Sid Gold’s operators secured a 1,700-square-foot space in the hotel.

When it opens, Sid Gold’s will have a main entrance through the alley behind the hotel that will open into a bar room. A separate piano bar room will be located in the back of the space. Devitt describes the space as having a “vintage feel” with a 1970s, “sophisticated basement bar” aesthetic featuring items he’s collected at various estate sales over the years. A set of old wall mirrors from a home, for example, may become the back bar for the Detroit location. The space will have a mixture of booth and bar seating for around 70 people.

The bar will offer a similar menu to the New York location with a mixture of classic cocktails and music-inspired drinks like the Velvet Underground with bourbon, lime, and velvet falernum. Sid Gold’s will also offer beer and wine. The owners opted to omit the food due, in part, to the logistics of the operation and the fact that the Siren Hotel already has a number of restaurants on the premises.

The bar will open roughly six days a week. Each service will likely kick off with happy hour and live cabaret-style entertainment, before moving into piano karaoke later in the evening. “It’s kind of a place that people are going to end up” at the end of a night out on the town, he says.

Construction on Sid Gold’s is expected to begin within the next two weeks and Devitt anticipates that the bar will open sometime in October. As for whether there’s another Beauty Bar-style expansion in store for the Sid Gold’s brand, Devitt says he’s keeping his options open for locations closer to the East Coast such as Nashville.

When it opens, Sid Gold’s Request Room will join wide selection of food, beverage, and retail projects at the Siren Hotel. The boutique hotel opened its doors inside the historic Wurlitzer Building earlier this year and now features spots like Populace Coffee and Candy Bar. The current lineup will eventually grow to include an eight-seat tasting menu restaurant Albena, a second floor restaurant called Karl’s, a wine bar and record store, and an as-of-yet-unnamed rooftop bar.
