It’s beginning to look a lot like opening season for SheWolf in Cass Corridor. Chef Anthony Lombardo’s Roman-style pasta restaurant began its private friends and family soft openings over the weekend. Although possible opening dates have been bandied about on social media, Lombardo says the hotly anticipated establishment anchoring the Selden condo development has not settled on an official opening date yet.
Lombardo was previously the executive chef at Bacco in Southfield and has also done stints at restaurants in Washington D.C. including the Hamilton and 1789. He’s also spent some time working at restaurants in Italy. SheWolf’s name is derived from the myth of the founding of Rome, which twin brothers Romulus and remus nursed from a wolf. The restaurant’s signage and interior decor also ties into that tale.
The menu is expected to delve farther into Lombardo’s Italian dining repertoire with a focus on contemporary Roman cuisine served at the city’s working-class pastificios or “pasta factories.” That means plenty of pasta made fresh at SheWolf including carbona, amatriciana, and cacio e pepe. The 3,300-square-foot spot is even milling its own flour for the pasta. SheWolf will also feature a full bar with plenty of Italian wine and cocktails.
While the restaurant is remaining relatively quiet on the details of its imminent debut, people who visited during the private preview have been taking to Instagram over the weekend to tease the new spot. Stay tuned for more updates.
