The beer is nearly ready to start flowing at Detroit’s latest bar addition Cøllect in Eastern Market. The bar, located on the second floor above neighborhood restaurant Gather, is awaiting final inspections with plans to open this week with 14 taps and a collection of American and international craft beers.
Gather’s owners Lea and Kyle Hunt began converting the space from an Airbnb into a new business last spring as a way to offer customers a wider selection of drinks. The space features 14 bar stools and an additional 20 bench-style seats with small tables. If Cøllect receives city approval, the Hunts may also eventually open the rooftop to guests.
Like its sister restaurant, Cøllect has a minimalist, Scandinavian aesthetic that’s also tied into the name. Inserted into the name (pronounced “collect”) is the Danish word øl for “beer.” While the Cøllect is largely filled with white paint, white subway tile, and blue upholstery, Australian artist David “Meggs” Hooke was brought in to create mural. The piece adds a punch of color to the space.
Cøllect’s menu features beers from smaller American breweries with limited distributions as well options from so-called nomadic brewers that utilize equipment from more established breweries. Several taps will also be devoted to kombucha and cider. Draft pours are available in 4, 7, 11, and 17-ounce pours. The bar also offers bottles and cans for sale and the business holds a to-go license so customers can purchase four packs at a discount to take home.
The Cøllect is currently awaiting final approval from the liquor commission, but if all goes according to plan will open either tonight or Friday, October 12. Take a peek around the space and scope out the menu ahead of the opening.
