Jason Osburn, who recently stepped in as sous chef at the popular Gold Cash Gold, will be leaving his post at the Corktown eatery in the coming weeks to take an executive chef gig at 1 Under at 35780 Five Mile Road in Livonia.
He’ll be brought on to revamp the food menu at the sports bar, which already boasts a robust selection of craft beer, including 76 that are on tap. After 10 years in business, the ownership wants to round out its offerings on the food side as well, Osburn tells Eater.
The changes are set to take place after St. Patrick’s Day. Osburn says he’ll stick to gastropub fare, but utilize his approach to using ingredients that are sourced from local farmers and purveyors.
Osburn, who holds occasional pop-up dinners under the name Felony Provisions, is known for his farm-to-table ethos, as well as his expertise in charcuterie.
While his departure from Gold Cash Gold — whose menu under chef Brendon Edwards also heavily emphasizes local ingredients — in favor of a suburban sports bar might seem out place, Osburn tells Eater he’s looking forward to bringing a chef-driven approach to a casual environment.
“They already are an established beer destination, now with this, it will become a complete destination,” Osburn says.
The switch could prove to be a positive professional challenge as well. The spot has a much higher volume than any place Osburn has worked previously. He says the move will allow him to educate diners who might otherwise be intimidated by the idea of a locavore menu.
