Chef Max Hardy’s River Bistro Debuts August 13 in Rosedale Park

Aspiring empire builder chef Maxcel Hardy is preparing to unleash the first of his reported trio of Detroit restaurants near Rosedale Park this month. Representatives for Hardy confirmed to Eater today that River Bistro is set to open its doors to the public on August 13 .

River Bistro is filling the former Good Taste Louisiana Fried Chicken at 18456 Grand River Avenue. Hardy’s menu blends Caribbean and soul food flavors with dishes like honey-spiced chicken wings, Jerk ribs with island slaw and plantain chips, and skillet-fried fish sandwiches.

The restaurant’s small footprint dictates that it focus primarily on carryout and delivery, though two communal eight-seat tables will be available for dine-in. River Bistro will also offer brunch on Saturdays and Sundays with steak and eggs, biscuits and gravy, and sweet potato waffles with honey chicken and thyme butter. River Bistro will also feature a small 12-seat private dining room.

In addition to River Bistro, Hardy is expected to open an Asian and Caribbean-influenced chicken restaurant called Coop in the forthcoming Detroit Shipping Co. food hall this fall and a larger restaurant in the Detroit Red Wings arena development called Honey next year.
