Corktown’s recently renovated Trumbull & Porter Hotel is preparing to unveil its flagship restaurant next month. The long-overdue Red Dunn Kitchen is accepting reservations with seatings starting on June 1, according to the restaurant’s website.
Executive chef Jay Gundy’s (previously Cork Wine Pub) menu leans towards contemporary American fare with dishes like bacon wrapped Maple Leaf Farms duck breast, parmesan dill popovers, and smoked tamari marinated salmon collars with lime. Red Dunn will open daily for breakfast, lunch, and dinner with separate limited-seating Chef’s Table dinners slated to kick off this summer. The restaurant is also expected to feature a courtyard seating area.

Red Dunn Kitchen was initially expected to launch over Labor Day Weekend in 2016 alongside the hotel’s Burroughs Lounge and Steak Room private dining space, however financing delays pushed back the opening date. Crain’s reported in September that the hotel had secured a $7.85 million loan to complete renovations on the property, which was previously known as the Corktown Hotel.
