After months of honing dinner services, Ferndale restaurant The Conserva decided to introduce brunch this month. The midday meal came easily from chef Matt Baldridge, as he regularly prepared brunch for his Dinner Club Pop-Up at The Storefront Gallery, previous to opening The Conserva.
The new brunch menu takes cues from Baldridge’s childhood — including his father’s bacon, Miracle Whip, and peanut butter sandwich. The chef has jazzed up the combination however as a plate of smoked pork belly, peanut sauce, Kewpie mayo, and eggs on a baguette. Brunch also includes a pannukakku, a Finnish baked pancake, borrowed from Baldridge’s grandmother. Also look for seasonal fruit plates, with whipped yogurt and toasted oats, and bloody marys from bartender Jarrod Kassis. The brunch menu changes weekly.
The Conserva offers Sunday brunch from 10:00 a.m. to 3:00 p.m.
