Detroit’s Ultra-Luxe Steakhouse Prime + Proper Debuts Tonight

Dry-aged steaks, caviar, and ash-roasted potatoes

Detroit’s swanky new modern steakhouse Prime + Proper is ready to bring dry-aged porterhouses, caviar, and old world wines to downtown. A representative confirms to Eater that the long-overdue restaurant located at the corner of Griswold and State Street in Capitol Park has officially passed its final inspection in time for tonight’s anticipated opening.

Developed by Jeremy Sasson’s Heirloom Hospitality, the restaurant group behind Townhouse, Prime + Proper aims to create a luxurious, fine-dining atmosphere for carnivores.

The restaurant features its own dedicated butcher, Walter Apfelbaum, who maintains a stable of meats including beef, lamb, and whole ducks. Each piece of protein develops its flavor in the restaurant’s salt-lined dry-aging room. Beef, for example, is aged for a minimum of 28 days before making it to customers’ plates.

In addition to steaks, the restaurant features a substantial raw bar. For a sampling of the seafood options, check out the “Proper Plateau” filled with sampling of seafood ranging from oysters to lobster to crab and tuna poke. Customers can also find items like zucchini and eggplant chips, wood-fired napa cabbage, and ash-roasted potatoes on chef Ryan Prentiss’ menu. For those looking to up the ante on a no doubt expensive meal there is even a caviar service.

Sasson spent roughly $3 million renovating the destination restaurant, according to the Detroit Free Press. Designed by McIntosh Poris Associates, the restaurant features a classic interior filled with rounded booths and a black and white color palette that’s accented by brass.

The patio, somewhat of a signature for the Townhouse brand, hasn’t been overlooked at Prime + Proper. In warmer whether the windows will open up to the exterior and seating will pour out onto the sidewalk across from the park.

In addition to the ambitious restaurant, Heirloom Hospitality’s team is continuing to develop a elite, invite-only bar called Cash Only beneath the restaurant. Sasson previously described the lounge as an “an amenity” reserved for regulars.

The doors at Prime + Proper open tonight at 5 p.m. and reservations are strongly recommended. In the meantime, take a peek at the menu below:
