The mystery surrounding Fountain Bistro’s anticipated replacement restaurant is finally, or at least partially, over as we can finally refer to it by its given name. A tipster alerted Eater to several recent Craigslist job postings, which allude to a “chef driven” and “centrally located” restaurant at Campus Martius Park named Parc. Further internet sleuthing confirms that the address matches the former Fountain Bistro, which shuttered in February after being acquired by a restaurant group known as (rather conveniently) 800 Parc LLC. Eater reached out to a representative for the group, who declined to confirm details of the project.
The restaurant’s assumed social media accounts describe Parc as a “fine dining” concept with “refined Detroit cuisine.” They also provide some exterior renderings of the eatery that show off the previously reported enclosed patio with the ever-so-popular retractable NanaWalls and a fresh facade that may or may not have some sort of grass growing out of it.
Parc is expected to host a hiring fair from 11 a.m. to 4 p.m. on September 27 at the Hilton Garden Inn on Gratiot. The restaurant is seeking all positions including bussers, bartenders, servers, line cooks, and beyond. In addition to its fine dining restaurant, the 800 Parc group quietly debuted its casual, seasonal Campus Martius bar and grill, Fountain Detroit, in May. Parc restaurant is expected to debut in November. Stay tuned.
