Last week chef Luciano DelSignore of Bacco Ristorante in Southfield and Bigalora launched an effort to raise $50,000 for victims of central Italy’s recent deadly earthquake by asking local restaurants to serve up a classic regional pasta dish, Spaghetti all’Amatriciana.
Typically made with guanciale, chile, flakes, yellow onion, pecorino romano, pepper, tomatoes, and olive oil, the recipe for Spaghetti all’Amatriciana was first developed in Amatrice — located at the epicenter of last Wednesday’s quake. Every year in August, the town hosts a festival to celebrate the dish. This year would have marked its 50th anniversary.
Numerous local restaurants have now signed on to participate in the fundraiser called Michigan Chefs for Amatrice. The group is currently setting up a Go Fund Me page, where monetary donations will also be accepted (Eater Detroit will update the link when it goes live).
