SWITCHEROOS — Say so long to Mabel Gray as you know it — at least temporarily. From September 6 through September 24 chef James Rigato will hand over the reigns to chef Omar Ramirez and pop-up, “Spanglish: A Temporary Taqueria.” Rigato will in turn be leaving town for a pop-up in Italy aside Bacco Ristorante’s Luciano del Signore. CAFFEINE NATION — A Detroit-area startup Gayo Kopi is launching a line of specialty coffee. Unlike your standard cup of joe, the pricey beans first travel through the guts of Asian palm civets known as luwaks. While many bean producers collect the civets in cages, these bean digesters are certified-free range. [DBiz]
