West Village's plant-based restaurant Detroit Vegan Soul is expanding to Northwest Detroit. Local organization The Food Lab made the announcement on Wednesday evening with a post to Instagram. Owners Kirsten Ussery-Boyd and Erika Boyd appear to have acquired the former Blue Moon Ice Cream shop on Grand River Avenue near Auburn Street and Pages Bookshop. Detroit Vegan Soul opened the doors at its West Village shop in Fall 2013 and has quickly grown its business, paving the way to more vegetarian dining options in the city. The owners previously received small business grants to purchase a walk-in freezer and expand its catering operations with a new company vehicle. Stay tuned for updates.
Update, 6/2, 4:40 p.m.: Reached by email co-owner Kirsten Ussery-Boyd tells Eater that they very recently acquired keys to the building and have not begun renovations yet. "At this time, our goal is to be in the position for a soft opening late this year around December and fully open next year."
