One of this summer’s most anticipated openings, Grey Ghost, is aiming for mid-July debut chefs John Vermiglio and Joe Giacomino confirm to MLive, though a specific date hasn't been set. The meat-centric restaurant announced this week that it would begin hiring staff for its location on East Watson in the former Ye Olde Butcher Shoppe space. The chefs have yet to reveal any particulars of the menu, though Giacomino suggests that steaks and organ meats will be on offer.

The duo revealed plans for their restaurant last fall in partnership with bartender Will Lee and David Vermiglio. John Vermiglio is a Detroit native who met Giacomino when the pair worked with the Matthias Merges’s restaurant group in Chicago. Throughout last winter, the partners hosted a series of dinners focused on different types of meat including beef, pork, and poultry. The group will serve a final preview meal — a pig roast — this Friday to benefit Crossroads of Michigan, an organization that offers social service outreach in Detroit.
