Royal Oak restaurants Ale Mary's Beer Hall and Tom's Oyster Bar have tapped a new executive chef. Zack Borowski will replace Norman Fenton, who's leaving this month to join the Alinea Restaurant Group in Chicago, according to The Detroit Free Press. Borowski received his culinary arts degree from Schoolcraft College and has work in a number of kitchens around Metro Detroit including Hamlin Corner, Social Kitchen and Bar, Town Tavern, and Green Dot Stables where he was sous chef.

Borowski says he plans to stay the course in terms of the menus at the neighboring restaurants, which were revamped when Fenton was hired last fall. "Initially, I want to make sure that it continues to run and work as a unit," he tells the Free Press. "Chef Norman did a great job with laying a lot of groundwork and revamping the menu. I expect, definitely, to put my own spin on things. That time will come." Fenton's last day is March 20.
