Raucous downtown speakeasy Cafe D’Mongo’s is preparing a new series of rotating food choices to help soak up all those Detroit Browns. Owner Larry Mongo tells Eater after experimenting with ways to bring bar snacks back to D’Mongo’s he’s decided to launch a weekly grilled cheese special.

The gourmet sandwiches will feature rotating combinations of “cheeses from around the world.” He adds that the bar is also reaching out to friends at restaurants from across the city to occasionally takeover the grill and bring a new flavor to the menu.

Each grilled cheese meal will be accompanied by a side such as soup. Starting this Thursday, November 17, customers can look out for Mongo’s contribution: The Classic with “welfare cheese” on challah from Avalon International Breads with a side of tomato soup and a pickle for $5. As for the Peking Duck featured on Bizarre Foods with Andrew Zimmern, Mongo says his signature dish might make it into future soup recipes.
