Salt & Saffron Chef Plots New Ice Cream Trailer

A sweet new ice cream concept is preparing to roll into Detroit. Chef Matt Tulpa of area pop-up Salt & Saffron plans to launch an ice cream trailer — tentatively called Vicecream — this spring.

Like many modern chefs, Tulpa says he's considers ice cream "a good canvas for lots of interesting flavors." The chef recalls one of his recent brunch pop-ups at Coffee and (____) where he made a scrambled egg ice cream. "It was kind of challenging to some people but once they had it [they realized] it was really good." He hopes to bring the same kind of experience to customers at Vicecream with flavors like avocado-brown sugar ice cream.

Working with him in the venture is veteran food truck operator Omar Anani (Twisted Mitten, Grill Billies, and Fat Panda). The pair recently acquired an Airstream trailer and plan to do some minimal work on it ahead of the launch. Ice cream will be prepared in Anani's commissary and stored in biodegradable packaging for transport aboard the trailer to sites across metro Detroit.

Tulpa says he's already talking with local restaurants about parking the trailer outside and has booked at least one private party for the summer. Tulpa and Anani are aiming for late March or early April debut. Stay tuned.
