Renovations to Birmingham bistro Forest Grill will likely include minor interior design changes and "more indoor-outdoor dining space" building co-owner and restaurant partner Victor Saroki tells Eater. Saroki and his partners from Elm Street Restaurant Group are in the process of submitting their project to the Birmingham planning board and hope to see it approved by the end of the month. While renderings weren't available, Saroki says the design includes folding glass Nana Walls that will give the restaurant a more open air-feel in warmer months.
Saroki says taking over chef Brian Polcyn's restaurant was a natural move for himself and co-owners who had already invested a substantial amount of time and money into the grill. They are letting executive chef Nick Janutol take the lead in developing and updating the menu this summer. "It's still going to be upscale dining, modern cuisine," Saroki says. Janutol chose not comment on the menu until after the restaurant plans are approved. If all goes well, Saroki expects to see Forest Grill reopen in September.
