No Sour Cream or Cheese at Chavo's Tacos

In an interview with Metro Times, Chavo's Tacos founder Salvador Zavala talks authentic street tacos and his shelf-stable guacamole. Zavala got his start selling tacos during a street sale in his Dearborn neighborhood. When the tacos became a hit, he found additional help starting Chavo's through FoodLab and Detroit Kitchen Connect. Things taco lovers won't find at Chavo's: sour cream and cheese.

"I've had people walk away from me when they hear there's no cheese. I was doing an event at the Dearborn Historical Museum and people would come up and look at the menu and say, 'Where's the sour cream and cheese?' 'Sorry ... only cilantro and lime.' And they'd walk away without ordering anything."
