Ann Arbor Chef to Revive Eve with Veggie-Focused Menu

Former Top Chef contestant Eve Aronoff is reviving her upscale concept, eve the restaurant.

Ann Arbor chef Eve Aronoff has signed a lease to reopen her eponymous restaurant in the Bell Tower Hotel. MLive reports that the chef, who shuttered her upscale eatery four years ago due to personal health issues, will takeover the 1,600-square-foot space left vacant by Mercy's Restaurant.

Aronoff, who competed in Top Chef Season 6, says the new restaurant will be similar in character to the earlier rendition; however, like the chef's personal tastes, the menu will demonstrate an updated perspective.

"I've changed in certain ways. One is that I eat vegetarian much more often, and I am striving for a menu that is about 40 percent vegetarian. Not using tofu or seitan or texturized vegetable proteins, but basing the menu on the harvest and seasonality. It will be delicious," she tells MLive.

Aronoff expects the upscale eatery to debut by mid-June.
