Behold Republic, the Meaty New Tavern at the G.A.R.

Today is the day for Kate Williams' long-awaited new restaurant.

The first of Chef Kate Williams' two restaurants in downtown's remodeled G.A.R. Building makes its long-awaited debut tonight. Republic is an upscale tavern serving meat-centric dishes like bone marrow fritters, beef tallow fries, and housemade charcuterie and sausages, as well as a whole chicken to feed four people and a selection of craft cocktails, some of which will be bottled.

Hot on the heels of Republic will be Parks and Rec, a diner-inspired concept expected to open soon. Republic will be open for dinner only, with lunch service to be added later; the 50-seat restaurant will take reservations, though part of the restaurant will be set aside for walk-ins.
