Chef Kate Williams' Republic Opens Friday with Menu Touting Beef Tallow Fries [Updated]

The anticipated G.A.R. Castle restaurant debuts this Friday.

Commence mutual sighs of relief. Republic will open to the public on Wednesday* according to a mouthwatering post teasing one of the restaurant's menu items: beef tallow fries. "These fries have crunchy exterior like a potato chip with a fluffy interior like a mashed potato. Wonderfully seasoned, they're perfect with beer or our lamb loin. If you're feeling frisky, try them along side our aged beef tartare," the company writes.

Chef Kate Williams and her team hosted several invite-only soft opening events over the weekend with guests including Mayor Mike Duggan and Lori Duggan and Joe Hakim of The Hungry Dudes.
