EVENTWIRE — Republic's butcher Larissa Popa is hosting a pork-filled, five-course pop-up benefitting Yale-based humanely raised hog supplier Melo Farms. Popa hopes to generate around $3,000 to help Melo purchase a replacement tractor. The menu features crispy jowl bacon, smoked ham hocks, Berkshire pork country pate, pork tenderloin, and pistachio chiffon cake with beet ice cream and lard icing. Tickets are $55. [EaterWire]
