A fresh coat of paint and a new set of tile have already been applied to Chartreuse Kitchen and Cocktails in the Park Shelton building. But what of the chef? Model D has the details in an interview with owner Sandy Levine, who says he and his wife have recruited an unnamed chef from a different restaurant "about an hour and a half away," after a surprisingly delicious meal. The restaurateur says the chef's identity will remain a secret until they complete their stint with their current employer.

In terms of the menu, Levine says that things at Chartreuse will be kept simple and classic. Ingredients for the American cuisine will be refreshed frequently throughout the week due to the space's small storage capacity.

The bar won't be complex like The Oakland:

"We won't need a crazy selection of spirits," Levine says. "We'll just make crazy good drinks. This will be a neighborhood restaurant where we'll do things simply and well."
